Gluten Free Vanilla Cupcakes

If you’re looking for the perfect cupcake recipe, look no further. These cupcakes are a staple in our house anytime there’s a celebration and they’re made with a special ingredient. We swap milk with Lifeway Organic Kefir to make these so incredibly moist and delicious! Seriously the texture is next level.
Ingredients
- 1 ½ cups gluten free 1 to 1 baking flour
- 1 ½ teaspoons baking powder
- ½ cup unsalted butter, softened
- 1 cup cane sugar
- 2 eggs
- 2 teaspoons pure vanilla extract
- ⅓ cup + 2 tbsp Lifeway Organic Plain Kefir
- Vanilla frosting
- Rainbow sprinkles
Instructions
- Preheat oven to 350 degrees. Line a 12-muffin pan with cupcake liners & spray with nonstick spray.
- Combine gluten free flour and baking powder in a bowl. Set aside.
- Using a hand mixer, in a large bowl cream butter and sugar. Then beat in the eggs and pure vanilla extract.
- Slowly add flour mixture to wet mixture a little bit at a time and combine well, then lastly mix in the kefir.
- Pour batter into cupcake liners 2/3 of the way full.
- Bake for 20 minutes, or until a toothpick comes back clean, and let cool for 30 minutes before frosting.
- Frost the cupcakes with as much as your heart desires and top with sprinkles.
