Roasted Red Pepper Pasta Salad

This roasted red pepper pasta salad is light, fresh and gut healthy – thanks to Lifeway Kefirs Probiotic Farmers Cheese. I love adding in this farmers cheese because it is packed with probiotics, has 13 grams of protein, and adds a creamy & tangy addition to the pasta salad.

Roasted Red Pepper & Farmers Cheese Pasta Salad

This pasta salad is light, fresh and gut healthy – thanks to Lifeway Kefirs Probiotic Farmers Cheese. I love adding in this farmers cheese because it is packed with probiotics, has 13 grams of protein, and adds a creamy & tangy addition to the pasta salad.

Ingredients

  • 1 Box Rigatoni Prepared according to box
  • 5 Red bell peppers Halved and deseeded
  • 1/2 Red onion Thinly sliced
  • Lifeway Kefir Probiotic Farmers Cheese
  • Handful Basil Thinly sliced

Dressing

  • 1 tbsp Minced garlic
  • 4 tbsp Balsamic vinegar
  • 4 tbsp Extra virgin olive oil
  • 1/2 tsp Honey
  • Salt to taste

Instructions

  • Add all dressing ingredients to a blender and mix until fully combined. Set aside.
  • Preheat oven to 425. Add peppers face down to greased baking sheet and drizzle with olive oil. Bake for about 20-25 minutes. Let cool, then slice.
  • Add all ingredients to a big bowl and toss with dressing. Top with more fresh basil and cheese.
