Roasted Red Pepper Pasta Salad

Roasted Red Pepper & Farmers Cheese Pasta Salad
This pasta salad is light, fresh and gut healthy – thanks to Lifeway Kefirs Probiotic Farmers Cheese. I love adding in this farmers cheese because it is packed with probiotics, has 13 grams of protein, and adds a creamy & tangy addition to the pasta salad.
Ingredients
- 1 Box Rigatoni, Prepared according to box
- 5 Red bell peppers, Halved and deseeded
- ½ Red onion, Thinly sliced
- Lifeway Kefir Probiotic Farmers Cheese
- Handful Basil , Thinly sliced
Dressing
- 1 tbsp Minced garlic
- 4 tbsp Balsamic vinegar
- 4 tbsp Extra virgin olive oil
- ½ tsp Honey
- Salt, to taste
Instructions
- Add all dressing ingredients to a blender and mix until fully combined. Set aside.
- Preheat oven to 425. Add peppers face down to greased baking sheet and drizzle with olive oil. Bake for about 20-25 minutes. Let cool, then slice.
- Add all ingredients to a big bowl and toss with dressing. Top with more fresh basil and cheese.
