Ingredients & Substitutions

  • Brown rice pasta. Cooked & cooled according to box. Brown rice pasta is my favorite gluten free pasta alternative. You can use whatever pasta you like best! I love a penne, fusili, or bowtie.
  • Cherry tomatoes. Pint of cherry or grape tomatoes, halved.
  • Red onion. 1/2 red onion, diced. You can also use a yellow or white onion.
  • Roasted red peppers. 1/2 cup of roasted red peppers. You can roast your own red peppers in the oven or use a jar of roasted red peppers.
  • Banana peppers. 1/2 cup banana peppers. Look at the ingredients in the jar and choose one made with only a few ingredients, preferably all things you know what they are.
  • Artichokes. 1 can of artichoke hearts, drained and chopped.
  • Hard salami. 4 oz of hard salami, cubed. You can also add in hard pepperoni as well.
  • Fresh parsley. Large handful of fresh parsley, chopped. You can also add in fresh basil.
  • Lemon juice. 1 tbsp of lemon juice for some acidity.
  • Extra virgin olive oil. Use a good quality extra virgin olive oil. This will be the base of the dressing. You can use avocado oil.
  • Balsamic vinegar. This adds a little sweetness and bitterness to the dressing. You can use red wine vinegar as well.
  • Minced garlic. 1/2 tbsp of minced garlic.
  • Spices. Red pepper flakes, oregano, salt, and pepper are used to season the dressing.
  • Optional. 1-2 tsp Honey to cut into the bitterness and adds some sweetness.

How to Make

Step 1

Make the dressing. Add lemon juice, extra virgin olive oil, balsamic vinegar, and spices to a bowl and mix until combined.

Make the pasta salad. Add cooked and cooled pasta to a large bowl. Then add in the rest of the pasta salad ingredients.

Step 3

Add the dressing. Pour the dressing over the pasta salad and toss until fully combined.

  • pint cherry tomtaoes, halved
  • ½ red onion, chopped
  • ½ cup roasted red pepper strips
  • ½ cup banana pepper rings
  • 14 oz can artichoke hearts, chopped
  • 4 oz salami, cubed
  • large handful fresh parsley, chopped

Dressing

  • ½ cup extra virgin olive oil
  • cup balsamic vinegar
  • 1 tbsp lemon juice
  • ½ tbsp minced garlic
  • 1 tsp honey, optional
  • 1 tsp oregano
  • 1 tsp red pepper flakes
  • salt & pepper, to taste
