Ingredients & Substitutions
- Romaine lettuce. 2-3 large heads of romaine lettuce, chopped. Sub with greens of choice.
- Zucchini. 1 large zucchini, chopped.
- Bell pepper. Red, yellow, or orange bell pepper. Deseeded and sliced.
- Red onion. 1/2 red onion, cut into largely chopped. Sub yellow onion.
- Corn. 1 head of corn, cooked and cut off the cob.
- Sunburst tomatoes. 1 pint of tomatoes. Sub cherry or grape tomatoes.
- Kefir. 1/4 cup of plain kefir. My favorite is Lifeway Grass fed Kefir.
- Extra Virgin Olive Oil. 2 tbsp of extra virgin olive oil.
- Lemon Juice. Juice from 1/2 lemon, about 1 tbsp.
- Avocado. 1/4 of an avocado, this helps add creaminess to the dressing.
- Basil. Handful of fresh basil.
- Salt and pepper. Salt and pepper are added to the dressing, to taste.
How to Make
Step 1
Roast the vegetables. Toss the veggies with olive oil and salt then spread evenly on a baking sheet. Bake for about 15-20 minutes. Allow to cool for 5-10 minutes.
Step 2
Make the dressing. Add all of the dressing ingredients to a bowl and then use an immersion blender. Blend until smooth. If you don’t have an immersion blender you can use a high speed blender.
Step 3
Toss the salad. Add chopped romaine to a large bowl, add in roasted veggies and then toss with dressing until evenly coated.
Step 4
Serve and enjoy! Serve the farmers market salad as a side dish or with protein of choice for a perfectly balanced meal.
