Ingredients & Substitutions
- Kefir . You need 2 tbsp of Lifeway Kefir grass fed organic plain kefir.
- Farmers cheese. Use 1/2 cup of Lifeway Kefir farmers cheese, this can be subbed with cottage cheese.
- Banana. You will need 2 small bananas. Blend one banana into the pudding and the other will be used to layer the parfait.
- Maple syrup. Use 1 tbsp of maple syrup to sweeten it.
- Vanilla extract. Use 1/4 tsp of vanilla extract in the pudding.
- Granola. 1/3 cup granola, blended to a fine consistency. I love using homemade granola or Purely Elizabeth original granola.
How to Make This Healthy Banana Pudding
Step 1
Make the pudding layer. Next, add farmers cheese, kefir, maple syrup, banana, and vanilla to a blender and blend until smooth.
Step 2
Make the parfaits. In a glass jar, add layer of granola, followed by sliced banana then pudding. Keep doing this until you reach the top. Mine had about 3 layers.
Step 3
Enjoy! Enjoy your healthy banana parfait! You can top with some cinnamon if you’d like.
Expert Tips
- Blend granola then set aside before blending the pudding layer.
- Use homemade granola if you can! Homemade always tastes better in my opinion. If using store bought, I always choose Purely Elizabeth.
- If you’d like a thicker pudding, reduce amount of kefir. For a thinner consistency, slowly add more kefir to get desired consistency.
- Enjoy right away! The pudding is best slightly cold so make sure you get the kefir and cheese directly from the fridge when making this healthy banana pudding.
- You can use graham crackers or vanilla wafers in replacement of the granola but I love that granola is made with wholesome ingredients and makes this banana pudding a little healthier.
Yes! As long as you choose granola that is certified gluten free.
This is not dairy free and I haven’t tried making it with dairy free subs but I’m sure it would be delicious with a coconut yogurt in place of the farmers cheese.
