Ingredients & Substitutions

  • Shredded chicken breast. You will need 2 cups of cooked, diced shredded chicken (about 1.5 lbs). I love making mine in the instant pot, you can also buy a rotisserie chicken.
  • Apple. Red apple, cored and diced. You can use any type of apple you prefer. My favorite is envy apples.
  • Celery. 3-4 ribs of celery, diced.
  • Red onion. 1/2 red onion, diced. You can also use a yellow onion.
  • Carrots. 2 large carrots, peeled and diced.
  • Slivered almonds. 1/4 cup slivered almonds. You can also use walnuts.
  • Avocado oil mayo. 3-4 cup of whole30 compliant mayo. I love Chosen Foods or Primal Kitchen Foods.
  • Curry powder. 2-3 tsp of curry powder.
  • Lime. Juice from half of a lime.
  • Green onions. Green onions, diced. To garnish.

How to Make

Step 1

Make the curry mayo. In a small bowl, mix together Mayo, curry powder, salt and lime juice. Optional to add 1 tsp honey. 

Step 2

Add ingredients to a large bowl. Add chicken, apple, celery, carrot, red onion, and almonds to a large bowl. Pour Mayo mixture over and toss until fully combined. Add salt and pepper, to taste.

Step 3

Enjoy & serve! Garnish the whole30 curry chicken salad with green onions. Enjoy however you’d prefer! I love having mine with almond flour crackers or in a wrap. You can also have it over a bed of greens or in a sandwich.
