Gnocchi and Sausage Bake
This gnocchi and sausage bake is the perfect weeknight dinner. All you need is one pan and 30 minutes! Plus it couldn’t be easier to make. The crispy gnocchi, spicy sausage, and fresh veggies are topped with grated parmesan and a squeeze of lemon juice for a delicious, light meal.

Ingredients & Substitutions
- Potato Gnocchi. To keep this recipe gluten free you will need to use gf potato gnocchi.
- Broccolini. Largely chopped, you can use broccoli as well.
- Garlic. 3 cloves of garlic, minced.
- Extra virgin olive oil. Use olive oil when baking the veggies and sausage. You can sub avocado oil.
- Seasonings. Salt and red pepper flakes are needed.
- Hot sausage. 1 pound of your favorite sausage, casings removed.
- Cherry tomatoes. Use 1 pint of cherry tomatoes, you can sub grape tomatoes, sun gold tomatoes, or any other small tomato.
- Parmesan. This gnocchi and sausage bake is topped with fresh grated parmesan cheese.
- Lemon. Squeeze juice from 1/2 a lemon over top of the finished bake.

How to Make this Gnocchi and Sausage Bake
Step One
Preheat oven and prep ingredients. Preheat the oven to 425. Line a baking sheet with parchment paper. Add gnocchi, broccoli, and garlic to pan then drizzle with olive oil. Toss until fully combined then spread evenly. Season with salt and red pepper flakes.
Step Two
Add sausage. Pinch the sausage into bite sized pieces and place onto the veggies & gnocchi.
Step Three
Bake then add tomatoes. Bake for about 10-15 minutes. While baking, toss the tomatoes is a little bit of olive oil. Then add to baking sheet. Bake the sheet pan for another 15-20 minutes. Until the gnocchi is crispy and tomatoes are starting to burst.
Step Four
Remove from oven and enjoy. Remove sheet pan from oven, squeeze 1/2 lemon over it and top with fresh parmesan. Serve onto plates and top with more parmesan if you’d like!

- In order for this to be gluten free make sure you use gluten free potato gnocchi.
- Have fun with it, you can add any veggies you desire. It would be delicious with asparagus and red onion as well.

Store in an airtight container in the fridge for up to 4 days.
If spicy isn’t your thing, use a mild sausage and leave out the red pepper flakes.
Naturally gluten free and make it dairy free by leaving out the parmesan cheese.
