Sourdough Breakfast Casserole
This sourdough breakfast casserole with eggs, sausage, and cheddar is so easy to throw together and perfect for feeding a crowd! It is a long time family recipe from growing up and is one I now make for my daughter. You throw everything into a casserole pan the night before, refrigerate overnight, and bake in the morning – making it perfect for busy mornings or special occasions. Plus it is packed with protein and healthy fats for a wholesome start to the day.

Ingredients & Substitutions
- Ground pork. Organic ground pork is the protein in this sourdough breakfast casserole. You can sub ground pork, ground turkey, or ground chicken sausage.
- Eggs. You can’t have a breakfast casserole without eggs. Choose organic eggs when possible.
- Cheese. I prefer a raw cheddar cheese but you can use cheese of your choice.
- Sourdough bread. You want to use a really good bread here because it really adds to the texture and flavor. I love using homemade sourdough. You can sub for bread of your choice.
- Milk. Milk makes the eggs so fluffy and gives a bit of a creamy texture. Use a whole milk for the best texture and added nutrients.
- Seasonings. Dry ground mustard, red pepper flakes, salt, and pepper are used to give added flavor to the casserole.

How to Make this Sourdough Breakfast Casserole
Step 1
Preheat oven. Preheat oven to 350. Grease a 9×13 casserole dish with butter.
Cook the sausage. Heat oil in a large cast iron skillet. Add sausage and cook until browned, breaking up as it cooks. Remove from heat and drain excess liquid. Set aside.
Step 2
Mix eggs, milk, and seasonings. In a large bowl, add in eggs, milk, ground mustard, salt, and pepper. Whisk until fully combined.
Step 3
Combine ingredients. Add eggs to casserole dish. Stir in sausage, sourdough bread, and cheese. Pour into greased baking dish.
Step 4
Bake. Bake the casserole for about 1 hour or until the center is set. Broil 1-2 minutes to get a crisp top. Remove from oven and allow to cool for about 10-15 minutes.

Serve & enjoy! Cut the breakfast casserole into slices, serve and enjoy!

Expert Tips
- When using homemade sourdough, use a sourdough loaf that is a few days old, this helps with the texture when baking.
- For the best results, at the end of baking broil for a few minutes. This gives the most delicious crisp top and edges.
- While we keep things simple, you could easily add in a few veggies if your heart desires. It would be delicious with onion or a green like kale. I would lightly sauté the veggies before adding to the casserole and baking.
- This would make a great meal prep! The sourdough breakfast casserole reheats really well, making it a good option for work breakfast or just a quick breakfast on the go.
The good thing about this casserole is that it doesn’t need much to make it delicious! We serve ours warm with some salt and fresh black pepper.
Allow it to fully cool then store in an airtight container in the fridge for up to 4 days.
The best way to reheat is by popping it bake in the oven covered or in the air fryer. But for sake of time, you can also reheat in the microwave.
This recipe has gluten and dairy but could easily make it gluten free by using a gluten free bread.
