Ingredients & Substitutions

  • Butter. Butter is used to cook the onions and garlic.
  • Yellow onion & garlic. These add wonderful aromatics to the dish.
  • Ground chicken. Ground chicken is the protein in this recipe. You can also use a ground chicken sausage or ground turkey.
  • Tomato paste. Tomato paste adds a slight tang to the flavor of the dish.
  • Kale. The kale is a great way to add in greens. You can also use whole leaf spinach.
  • Diced tomatoes. A 15 oz can of diced tomatoes, this helps add flavor and texture to the sauces base.
  • Bone broth. Bone broth is used for the sauce base. It adds a little extra protein as well! You can sub with chicken stock.
  • Gluten free gnocchi. In order for this dish to be gluten free, make sure you use gluten free gnocchi. I love Isola brand.
  • Heavy cream. Heavy cream is a must for the creaminess of the sauce.
  • Cannellini beans. Canned cannellini beans adds fiber and protein to the dish. You can use butter beans or white beans.
  • Seasonings. You will use a few seasonings such as salt, pepper, red pepper flakes, and oregano.
  • Lemon juice. Juice from 1/2 a lemon adds flavor and acidity to the dish.
  • Parmesan cheese. Fresh parmesan cheese is used in the making of the dish and also as a garnish afterward.

How to Make this Tuscan Gnocchi

Step 1

Cook the aromatics. Add butter or oil to a large pot and heat over a medium high heat. Once butter is melted, add onions then cook until soft. Next add garlic, cook for 1-2 minutes. 

Step 2

Add the ground chicken. Add ground chicken to the pan. Cook for about 5-7 minutes or until browned, breaking up as you go. 

Step 3

Add tomato paste, kale, and seasonings. Next, add tomato paste and seasonings. Stir until fully combined then add in kale.

Step 4

Pour in heavy cream and bone broth. Pour in heavy cream and bone broth and bring to a simmer. Once simmering, add in gnocchi. Stir occasionally until the gnocchi is tender. 

Step 5

Stir in lemon juice and parmesan. Remove from heat and stir in parmesan and lemon juice. 

Step 6

Serve and enjoy! Ladle the tuscan gnocchi into bowls. Top with fresh parmesan.

  • ½ lemon, juice
  • ¼ tsp dried oregano
